Menu Plan Mondays~and then some

Yep, it is definitely Monday. Again. Why do the weeks at work drag on and on, but my so look forward to weekends seem to be perpetually stuck in fast forward? I have these grandiose ideas for my weekends that never seem to come to fruition. I am really not complaining. Okay maybe a little, but I don't mean it. I feel blessed to have every minute that ticks by, but some days I don't feel like I am moving forward much. That's just something I'll have to keep working at. Anyway.....  I totally blew off my menu for last week so I am jumping back on the bandwagon over at orgjunkie.com

I haven't made it to the grocery store yet, so tonight I will be scraping the bottom of the cabinets for dinner. I plan on going shopping tonight, though, so here is my menu for the week:
Tuesday will be simple spaghetti. I love it cause it's easy and the family loves it cause it tastes good.
Wednesday will be  Cheesy Chicken & Tomato Bruschetta Turnovers. These were yummy a few weeks ago.
Thursday I think Shepard's Pie. Super easy! 
Friday homemade pizza with toppings of choice.
Saturday will be meatball subs and rotel dip. You know, game day food. 
Sunday I think I would like some chicken stew.

I am still working on the coupon/saving money thing. I have just gotten Grocery University and today only it is less than 1/2 off. Check it out!! There are lots of other great deals out there and I hope to be back tomorrow to post some of those! Hope everyone has a great week.

Savings From Around the Net

I just love bargains, but with the new budget in mind the best I can hope for is to live vicariously through others. Hopefully, someone can find these awesome deals doable, then tell me all about the thrill of the deal!!

I am really interested in trying http://www.alice.com/. Has anyone tried this that can share their experience? Okay, now to the savings:

First, Saving and Giving has a great deal from Target. I am really wishing this was in the budget. They would be fun for any day or great to put up for Christmas.

Next up $he $aved is promoting Zulily's awesomeness. Yes~I am a member.  The costumes are the focus today.   My favorite is Spot the Barking Dalmation. Really great deal! She also has Amazon Golden Box Wii deals here. I had not seen this before, but will definitely be paying attention now. I could use my SwagBucks for Amazon gift cards to grab these with. I have been remiss in using my Swag lately, but will be jumping back on the wagon to save for Christmas. 


How about a cutie patootie free craft? That's still saving right? Check out these Recycled pillow box favors. How cute!! Not to mention planet friendly, right?

How about rocks or shells from vacation you're holding on to, but not sure what to do with? You could try making Beach rock souvenir collage. Just Lu used rocks, but I'm a betting that shells would be fabulous as well.

Menu Plan Mondays


Monday already~sheesh. The weekends are never long enough. This one coming up will be a 3 day kind of weekend {whoo-hoo!}.  What will you be doing for Labor Day? I haven't made firm plans, but I am pretty sure that one day will involve the lake, one will involve the pool and all will involve food. This past weekend involved all three as well. I still have not been grocery shopping, at least not seriously. Which is bad for the belly and the wallet. When I don't shop regularly and plan ahead we end up making random runs to Wal-Mart or to fast food places and both of those are BAD news!! So in hopes of getting back on track, here is the week's menu:
Monday-weeeellll I am totally cheating tonight. I know I have the fixings for chicken noodle and grilled cheese. I will be making a grocery run after work.
Tuesday will be Skillet Chicken Parmesan. I haven't tried this recipe before, but it sounds yummy.
Wednesday Slow Cooker French Onion Soup
Thursday I'm thinking Slow Cooker Cordon Bleu Chicken. Doesn't that sound delish? Another new one.
Friday I want A Copycat of Olive Garden's Zuppa Toscana with salad and garlic breadsticks with alfredo dipping sauce. This is one of my all time favorites.
Saturday, if I actually cook, will be mini burgers. We use King Hawaiian rolls as the buns and put BBQ sauce, cheese and french fried onions as toppings. I adore the Jack Daniel's Honey Smoke BBQ sauce. These are great by themselves, but I will probably be making some baked beans, corn on the cob and fries to go with them.
Then Sunday, again depending on circumstance, Crockpot Cream Cheese Chicken Pasta

I am getting lazy it seems. The majority of the recipes I have been researching are for the crock pot. It is so nice to come home from work and have most of the dinner prep already done. Also, I am on a chicken fad, see it? I get the frozen chicken breasts from Aldi's pretty cheap and they cook from frozen in the crock pot for a lot of recipes.

We are trying hard to get on budget using Dave Ramsey's plan. It is hard. I have been reading up on tips and ideas at The Dollar Stretcher.

Wednesday Pizza Dip with garlic bread and salad
Thursday Stuffed baked potatoes (chicken)
Friday Impossibly Easy Cheeseburger Pie, but I do add more seasoning
Saturday I want to try Parmesan Meatballs. I've never made it, but it sure sounds yummy!!
Sunday I am thinking a roast. What's on your menu for the week?

My awesome husband took me out and we had a great time. A little too much Captain-Morgan that is. The drink,  not my husband, I can never get enough of him!! I really enjoyed our night out and we are making plans for a regular date night. I love them younguns of mine, but even the adults need play time, right?

Let's talk about food baby (to the tune of a George Michael's hit)

My Sweet Cheeks is a bit of a picky eater so the same ole same ole sandwich routine doesn't always float her boat and most days she'll turn up her nose at cafeteria lunches. Here we are just in the second week of school and I am already floundering for some creative lunches that she will actually eat. Of course, my grocery shopping has been remiss lately which does not help. Anyway, I started looking for some new lunch ideas and came across Kraft recipes lunch ideas.  There are even some fun printables. Of course Christy at Southern Plate (one of my all time favorite websites!) has some fun lunch ideas as well. You should go visit her. Sit a spell~I really think you'll enjoy it. It really is like visiting with an old friend.

Not really food related, other than it could hold a lunch box, I wanted to show y'all this really neat backpack I heard about from Mamaista. It is such a cute idea and not really that expensive. It is the Go Vinci Backpack. Wouldn't that be fun for on the go or sitting at the doctor's office?

If you've been reading before, you know I wanted to participate in Menu Plan Monday. You also know by now that this has been an epic fail the last couple of Mondays. I know it is Wednesday already, but am still going to throw this out here. Monday I totally cheated and we had a frozen salisbury steak entree with rice and green beans.  Last night was yummy smoked pork chops just nicely browned in a skillet with mac and cheese and veggie medley. Tonight will be mini meatloaves (cooked in muffin tins) with garlic mashed and salad. Tomorrow night will be spaghetti. Friday night we'll be lip smacking some chicken stew-love, love this recipe from my fantastic sister-in-law. We have a lot happening this weekend so I won't list those. If we don't eat with friends one or both nights, I will probably order pizza or pick up something through a drive-thru. Real healthy, right?  So tell me, what's cooking at your place?

Some randomness

Before I take off running with this post, lemme give you the fine print...I have a cold and am highly medicated with OTC meds and really may or may not know what I am saying.  The girls made it back to school as of Monday. There is always that adjustment period that makes me feel like such a loser in the Mommy department. Y'all, I bought school supplies Sunday for school starting Monday. I am a shoe-in for mother of the year.  Despite my lack of planning and forethought, they went off well fed and well prepared. Lunches were packed, checks were written, breakfast cooked and eaten, clothes and children clean, hair and teeth brushed, shoes on, and excitement growing. They made it back home safely and seem to be off to a terrific start.

The worst part is always the shopping.  I despise Wal-Mart. I just luuvvv people trying to run me down with their buggies when I dare to stop long enough to try to find the normal size hand sanitizer rather than the elfin version on the shelf.  Then there are four hundred people checking out at one time and they have three registers open? REALLY? I am pretty sure that it was tax-free weekend and they could have predicted a larger than normal crowd. I usually try to shop at smaller stores- my faves are Fred's, Family Dollar, Dollar General and the Dollar Tree, but due to my poor choice in time management, I just thought Wal-Mart would be easier. Yeah, right. I do it EVERY TIME. And then I am ticked EVERY TIME.  Especially when you should be home free in the check out line, but noooo, they have to put every piece of As Seen On TV junk and candy crap that my kids want (but Mom I NEEEEEEDDDD it) RIGHT THERE in your face. I think the check out lines should be like home base in hide and seek-you know, a safe zone. Instead you have to stand there battling it with "no you don't need any chocolate-didn't I already peel you off the rafters twice and you already have four billion silly bands and no your brother doesn't need a flashlight and yes I already have batteries and no you can't shave until your 13 or later no matter how cute the razor is and yes I know that is supposed to make your lips really soft and shiny and no you cannot have an upside down plant growing thing and why would you want THAT??? Please just let me pay the woman so we can get the heck outta here!!!"  By the time I get out of there and load and unload the children and the treasure trove of items we didn't need, weren't on the list and I swore I wouldn't buy, I am ready for something stronger than sweet tea.

Now for the randomness-I was listening to the radio on the way to work and heard about something called the "Rapture Orphan Rescue".  Hearing this tidbit on the radio made me cringe thinking these folks were just plain off their rockers or maybe scam artists, but I Googled it and really it wasn't as bad as I thought. Apparently, some atheists and/or agnostics think this is a good way to make their point. It must be cause here I am telling y'all about it. I do consider myself a Christian, although, sometimes I am concerned that my actions are not reflecting that. That is a whole 'nother post friends. Anyway, just a point of interest. Google it if ya wanna. If you need some Christian inspiration, I love the Proverbs 31 Ministries

Here's some useful stuff from 5 Dinners. She has templates for monthly meal planning which I think are handy dandy. I totally blew off this week's menu and am flying by the seat of my pants. Well with being sick and all it just seemed like a good idea, although, in retrospect, the first week of school is not the time to get less organized.

Also, for anyone who hasn't finished their shopping, Old Navy has a great deal going in store. If you buy a backpack for $10 you get a free lunch box. I love it. Check these out

I spend a lot of time on the internet. A lot. I love finding new sites and fun new ways of doing things. 


Let me stop here and explain something about myself. I am cheap {but not easy}.  I don't buy many things new, and if I do buy new then not at full price. Especially for fast growing children who will either outgrow items or destroy them before getting my money's worth out of them. Besides, I really get a thrill out of thrift stores, yard sales, consignment shops and hand me downs. It is like treasure hunting. So in that regards, I am loving threadUP, a great clothes swapping site. It is an inexpensive way to gather school clothes and a fun way to clear out some closets. It is super simple to use and you pay just $13 for a box of goodies. You have to post a box as well to keep picking boxes, but you get one pick first!! 


I also love freebies. Some of my favorite freebies are printables. Here are probably a million (ok a few
hundred)  free printablesJust about anything you can think of from grocery lists, calendars and stationary to cards, invites and coloring pages. 


A new thing I just tried and am loving is Plastic Jungle.  It is a great site where you can trade gift cards you won't use for money or gift cards you WILL use. You can also purchase gift cards at a discount. I have already gotten my check for 2 gift cards!! I had also accidentally created a extra card swap. I just emailed their customer service and within 24 hours they had me all fixed!! I think they are great!!


How about a funtastic after school Snacktivity? I just love the hangman idea!!

Running behind~as usual


Okay, I didn't get my Menu Plan Monday up yesterday. I know it seems like I'm a slacker {I am}, but I really had a good reason. I had my National Registry test for my EMT Basic class yesterday afternoon. I spent all day yesterday bouncing between studying and panicking. That was hard work. Really. But hey I passed. Whoop, whoop!  It was also a really busy weekend. Bubby got a hair cut and the living room got a fresh coat of paint.

Tuesday~Chicken quesadillas (canned chicken, taco seasoning, cheese and toppings of choice). SO easy.
Wednesday~Meatloaf, mashed garlic potatoes, green beans
Thursday~stuffed baked potatoes with toppings of choice including chicken
Friday~taco soup
Saturday~having a party so it'll be hot dogs and burgers
Sunday~spaghetti

School stuff

In about 8 days, school will be back in session. Man, time flies when you're having fun (or if your not).  I went Tuesday to register Morgan for her JUNIOR year of high school. No really, she is in the 11th grade.  Do you know what that means? It means I am getting OLD. Agghhh. The funny part is Madison is starting 3rd grade this year and the Bubby just turned two. Can you say glutton for punishment? 


Anyway, back to registration.  Lemme just tell ya, that is an interesting spectacle to behold. Like a zoo, but without the cages. I asked Morgan if the students sat around the first day making fun of the parents.  She never answered so I take that as a yes. Not that I am innocent.  I had some definite questions regarding some of the clothing (or lack of) and hair options on the kids I saw. She really didn't need me to go, just my checkbook, but it was good to be there.  There was one outstanding moment, one of those that seem harder and harder to catch. We both looked at each other and said the same thing at the same time and she grins that beautiful grin and says "I love US". Us-her and me. Kinda gives me the warm fuzzies. I am so proud of her. I hope this is an exciting and fabulous year that lives up to all her expectations. This one's a biggie~her first parking pass, first prom, classes off campus~definitely not what we are used to.


After registration, since I had already taken the day off, Madison and I hit the pool.  A word of advice if I may. Don't throw caution to the wind just because it is only you and the eight year old in the pool. I mean a tankini is a tankini for a reason and you picked it for that reason. Like to hide the baby fat you have around the middle (it IS still baby fat, I don't care if he IS 2) . You know those areas that NEVER see the light of day.  Keep it that way. Just because no one else will see does not make it a good idea to roll the top up a bit and expose those pasty pale rolls to the sun for an hour without sunscreen. I assure you, it will not end well.  It will hurt. And your husband will laugh~on the inside if he is smart. Worse than the pain is the embarrassment of the fat roll burn lines. You know what I am talking about. So use extreme cautious and my new motto~if it's normally covered, keep it covered. 


Ok, so to finish up my random musings here, I want to share some back to school stuff I have begun using and tell you a few things we are doing to prep.


Most Mommas are probably well ahead of me on this, but if you haven't already, get back on the school schedule. Bedtime and morning time. Go ahead and start the routines. I am enjoying the whole Cozi website and its useful tools.  


Make sure you have all your supplies ready and the groceries you need for all the meals and snacks, cook ahead and freeze (pancakes, fruits and waffles), think of celebrating back to school in some small way like maybe a picnic or summer fun scrapbooking, and we are going to do a private back to school clothes fashion show this weekend.  Maybe your child(ren) would like to make something special for their new teacher.

Just one of those days~and some cool stuff

It definitely started out as one of those days. The hormones in full on attack mode and the caffeine cowering in the corner of my psyche.  It was all going fine until I got to work. Well, I suppose the little things actually started annoying the entire crap out of me on the drive in. You know, getting stuck behind the 18-wheeler and no one willing to let me over, or the big mows the grass on the side of the road thingie in my way (yes, that IS a technical term) and people in general not acknowledging my complete ownership of the road. That's not weaving, that's me marking my territory!


So anyway, I have been mulling it over trying to decide just when my brain turned into the Incredible Hulk. I am now most certain that calling the IRS for the business I work for was my undoing. Y'all~I try to be nice to everyone, really I do. To the point where I wonder if I surpass niceness and and am becoming the doormat. Yet, 5 minutes of electronic menus, 15 minutes on hold listening to baaaaddd music, to get someone who tells me that they cannot help me is REALLY frustrating. I mean really. I guess 20 minutes in the scheme of the universe isn't so bad, but dang it, it is MY 20 minutes and we ARE talking about the IRS-nuff said.  Grrr. 


I was so bad (hangs head in shame). I had to make a run to the post office and the nice civil servant asked how my day was. Typically my reply would be "Great, and yours?"  Instead today I said, "Shoulda stayed the hell in bed".  What did that poor woman do to deserve that? She was just trying to do her job, but here comes Mrs. Hormonal with a stick it where the sun don't shine attitude. 


Well, I fed the hormonal beast lunch and threw another pot of coffee at her and am now back to pseudo normal. I think the beast was mostly just hungry, although she was put in place a bit by this: "We also pray that you will be strengthened with his glorious power so that you will have all the patience and endurance you need." Colossians 1:11 (NLT).    Ahem. Thanks, Lord. I needed that.  (I wonder if maybe I should be concerned that I am referring to myself as two different personalities. Do me a favor, if y'all feel threatened, get me a straight jacket, mkay?)

Need a laugh~look here!

I literally laughed out loud at this post http://www.suburbansnapshots.com/2010/06/10-reasons-having-toddler-is-like-being.html by Suburban Snapshots and again at the comments.  It also reminded me of a frat partyish incident not so long ago at our house that we affectionately refer to as the Tidy Bowl Incident of '09. This is what happens when I think the Captain has boy child duty and he thinks I do.  Bubby surprised us both. Of course, being the good parent I am, my first course of action was to tell the Captain to keep the boy where he was while I fetched the camera.

I have always heard about Hooked on Phonics products and wondered if they were all they are touted to be. Has anyone ever used these products? Right now they are having a sale and it has my spending instinct on standby. It really isn't in the budget, but I would LOVE to get my eight year old the Hooked on Math.  Hmmm, I did see that they will do a five payment-payment plan.  I am seriously considering the Discover Reading Toddler Edition for Bubby. It looks fun and is only $19.95.

Menu Plan Mondays

I love following blogs and getting information and ideas. I am looking to get my life organized and moving in the direction I need it to go. So in that spirit, I am going to jump on the bandwagon and start my meal plans. I will be linking up to http://orgjunkie.com/ for the  MPM party.

Since I am trying to get my budget under control, most of these will also be relatively inexpensive meals.

Monday~chicken wraps using leftover BBQ chicken breasts from this weekend. All you need is the chicken, tortillas, and whatever toppings you choose. I think cheese and sour cream are must haves. Tortilla chips and salsa.
Tuesday~Shepard's pie (love all in one meals)
Wednesday~Salmon patties, fried taters & onions, green beans
Thursday~Chicken Alfredo (canned chicken and packaged Alfredo pasta), salad & bread
Friday~homemade pizza night with toppings of choice. Hopefully there will still be BBQ chicken leftover because I love that on mine!!
Saturday~Omelets with ingredients of choice. Mine will be turkey and cheese!
Sunday~roast with potatoes, onions, carrots cooked slowly all day. My favorite!

Wild Weekend~Mommy style

Hi y'all. Hope you are having a Blessed Monday. I am coming down from the wild weekend celebrating Madison's (aka Sweet Cheeks) 8th birthday. ALL day Saturday we played with friends and family. Hot dogs, cake, ice cream, swimming, and just chatting around the table. There were about 15 children from 22 months to 16 years. It was interesting to say the least.  I am so Blessed to have the opportunity to spend time with some amazing people. I hope they had as much fun as I did!

Yesterday we made the much anticipated trip "to town" for a wallet beating like no other~for a stuffed animal. You know that money sucking viper pit disguised as a children's toy store that lures you in with promises of undying love and cotton fiber fill? Yes, my friends, Build-A-Bear Workshop.  It hides its evilness with such cuteness as monkeys in tu-tus and puppies in cheerleading outfits. The audacity.  $130 bucks for 3 soon to be forgotten , dust collecting, bank account destroying, good for nuttin...{deep breathe} Go ahead and say it-SUCKER. I know you had to.  Sadly, this Momma fell for it. My wallet is NOT happy.  But my children are, even the 16 year old.

So baby boy is officially two now. With his blonde curly Q hair, baby blues and snaggle-tooth grin, I am so beyond wrapped. I love how he shows me 2 with his two index fingers held up close to his face. I love his "tickle tickle tickle" game even if he is really pinching the snot out of me. I love how he runs to me randomly for hugs and cries for Momma when he is sad or hurt. I love to watch him sleep. I love to see him play. My heart aches when I must leave each morning. I love all my children and each of them are special because they are who they are. He is my Bubby. My stubborn, not gonna give Momma a kiss cause she really wants one, giggling, sports loving, booty shakin', sissy aggravating, singing baby boy. And I love him so much.

Times are a changin'

Wow. It has been a very busy time. Summer has arrived with full force. Wild Thing has graduated and is making his decisions on life ahead. Will it be college, military, firefighter?  Angel Baby turned 16, started driving, got a job and is participating in dual enrollment at Jeff State. Sweet Cheeks will be 8 in July and finally has 2 loose teeth, of course it is her front teeth. Can't wait for those pics!! She was also the top AR (accelerated reading) student in her class. My Bubby is talking his head off and climbing anything in front of him. He will turn 2 in June. He is growing so fast!!  I have started EMT-B classes (3 nights a week with rotations on the weekends) in addition to the full time job.  LOVE it, by the way, even if it makes life more hectic. The Captain's schedule has changed-no more 7 on-7 off for now. I have reconnected with friends from the past and made many new friends. Friends have lost parents. Friends have had scares, like a motorcycle wreck. Friends are expecting babies, having babies, taking care of babies!! I know there are things I am forgetting, but whew. Most importantly, I am trying to learn and grow in my Faith in God.
I know there is more change to come. Some I am instigating and some, I am sure, will be quite unexpected as life tends to be. I am at a point in my life where some things HAVE to change and I will be sharing some of that here.  Still~daily I am so grateful for the Blessings in my life and Thank GOD through good and bad. How are things in your world?

So I really want to get this blog up and rolling. I think I could actually have something useful to share, however, life tends to get in the way. Each time I want to post, I run out of time or energy. By the time I get to recharge, the thoughts are gone!
